I wanted Thai food the other day. But most Thai is loaded with tons of sugar and other things I’m not eating right now so I made this instead! It was yummy.
¾ cup reduced fat coconut milk
6 cups of chicken broth
2.5 pounds of boneless skinless chicken breasts, cut into small chunks
2 cups of water

Sextuplets!
A curious thing is happening. Although I’m not losing very quickly, if at all the last few weeks, and my measurements haven’t changed, some sweet little sextuplets are about to be born. I think I’ll call them The Abbeys. In other words, in my opinion (and that is the ONLY opinion that counts!) my abs are [...]

I’m in the zone completing a HIIT (High Intensity Interval Training) on the treadmill. My legs are burning from lactic acid build up. I have 30 seconds left of a sprint before I can walk. Thank you for visiting!
One of my passions is healthy living. Despite this passion, last spring I reached my highest weight ever due to a battle with severe depression, personal circumstances, and poor choices. Unhappy with my self-image, the choices I was making (and that the fact I was going to have to start buying new pants) I decided I had to choose to get healthy again. In June 2008, I decided to start training for my first figure competition. My initial goal was to lose weight. I didn’t realize I would begin to lose others things in the process, such as my lingering sadness, my bad attitude, and my low-self esteem. To date I have lost almost 20 lbs and feel better than ever! Most importantly my chronic depression has all but disappeared and I once again have the confidence and energy to give to the people and activities I love. I’ve created this blog to encourage as many women as possible. Feel free to email me to say hi and if you want you can sign up for my newsletter to receive free updates, recipes, workouts and hopefully laughs! Wishing you the best as your journey toward your own health & fitness goals. You can do it!!!
